Gluten Free No Bake Protein Cookies

Here’s a recipe that I love and if you’re a coconut lover, you will too. These cookies are easy to make, high in protein and gluten free! When on the go, they make a great, healthy snack. I eat these cookies when I have back-to-back clients and may not have time for a meal.


3/4 cup shredded coconut

1/4 cup almond meal

2 scoops vanilla whey protein powder

4 tbsp. nut butter (I use Trader Joe’s Raw Almond Butter)

1/4 cup water

1 to 2 tbsp. coconut oil

Mix ingredients thoroughly and roll into balls. Roll cookie balls in shredded coconut to coat the outside. Place on cookie sheet and refrigerate or freeze until solid. Store in plastic container.

For variety you can use chocolate whey protein with coffee, instead of water, for a chocolate mocha cookie. Try adding chopped nuts or dried fruit and roll the cookies in ground cinnamon. Experiment with your favorite flavors! ENJOY!IMG_0011
