Female Fitness Trainer’s Favorite Snack Recipe

Hi! Welcome to my blog. I am Sharon Powell – your Personal Trainer of the Tucson Foothills.

One of my favorite snacks is Coconut Protein Pancakes. I make them from scratch. They are gluten free and guilt free! Here’s the recipe:

Ingredients:

4 tbsp shredded coconut

1 tbsp almond meal

1 scoop vanilla whey protein powder

2 eggs (I use jumbo size organic eggs) If your eggs are small, you may need to add less coconut.

Optional:  add crushed nuts, make sure they are raw nuts

Process:

Mix together dry ingredients first. Add eggs and mix gently. Avoid over-mixing as this can make the batter heavy. Let sit for 10 minutes. Cook in a fry pan using coconut oil. I think they’re delicious without syrup, but if you must, please use 100% pure maple syrup! (Or you defeat the purpose.)
